As restaurants closed their doors, people had to either rediscover their inner cook or look for new inspiration to set a different table every day. 1.- Enchiladas jaliscienses

Let’s begin with an authentic Mexican breakfast-dish, enchiladas jaliscienses, also known as enchiladas tapatias. It is a set of tacos showered with a dry-poblano-pepper sauce made by blending the pepper without seeds and veins, onion, garlic, and a pinch of salt. Once those ingredients are perfectly mixed, you must heat a pan with little oil and fry the mixture. Then, on another pan, you must slightly fry the tortillas. Be sure not to brown them. After, you only need to dip the tortillas in the sauce, fill them with queso fresco and roll them to turn a simple taco into a gorgeous enchilada. Finally, some sliced onion, lettuce, and sour cream on the top will make your taste buds travel to Mexico without leaving home.

2.- Chicken in Pink chocolate-sauce

The old-favorite Mexican mole becomes even better. After finding inspiration in the family recipes of Guerrero (a state in Mexico), chef Eduardo Marin created a beautiful dish that represents all the endemic flavors and aromas of Tequila. “This dish isn’t just visually attractive but delicious. The reason behind its success is the delicate balance of three main ingredients: beet, chipotle pepper, and white chocolate,” – claimed the chef.
