Tequila can be classified in different ways, based on its age, color, flavor and even its aroma. However, just as there are different varieties, there is a lot of misinformation that generates more confusion than clarity. But don't worry, below we'll leave you with a handy guide to becoming a tequila master.

For starters, remember that there is nothing better than a traditional Jose Cuervo Tequila prepared at Fábrica la Rojeña. This drink, unique and exclusive to Mexico, is very famous for its smoky and woody flavor with a slight sweet touch.

In the world of tequila, you can recognize two great types that, despite being called traditional tequilas and being the favorite on Mexican tables, have quite clear differences in terms of flavor, color, aroma and texture.

You are probably asking yourself now - what are the differences between tequila and 100% agave tequila? Which tastes better? Which is of better quality? We will now explain in detail the differences between one and the other.

Even though both tequilas originate in the same place, the agave fields. When you get to the factory, it makes a huge difference. The process, however, begins with the jima or, to put it less technically, the agave harvest. At this point, a jimador is responsible for removing the plant from the ground, cutting the pencas (leaves) and cleaning "the piña" (as the agave's core is known). It is important to note that once the heart of the agave is ready to be sent to Fábrica la Rojeña, it will take the name of the piña and become the main ingredient of our delicious blend.

Once in the factory, it is where a 100% agave tequila will be made, that is to say, the only ingredient of which is the juice extracted from the caramelized pineapple that goes through a process of fermentation and distillation.

Tequila

It is important to recognize that in order to be called "Tequila", the agave liquor must contain at least 51% pure agave juice, in addition to being produced within the space determined in the appellation of origin. In case it contains a lower percentage, the resulting drink would be another one such as mezcal, aguardiente or sotol. Then, a regular tequila is the drink whose production involves the combination of agave juice with other sugars such as piloncillo or cane sugar.

In general, there is no plausible difference in the quality of a regular Tequila and a 100% agave Tequila however it will depend a lot on your tastes to decide which one is the best. A regular Tequila, due to its mix of sugars tends to be sweeter and ideal for cocktails, while a 100% agave Tequila can be enjoyed more with a caballito and a slice of lime.

In this sense and just to clarify the difference, a 100% agave Tequila is one that does not combine different sugars to those of the juice extracted from the agave. It is said that this tequila has the best flavor, that, thanks to its ingredients, you can taste stronger notes and that its smell is simply spectacular.
