Pozole

As mexican flag, Pozole could be either green, white or red. This delightful soup with indigenous origins as as main ingredients cacahauzintle corn, chicken or pork and a mixture of spice and chili peppers. Also created during the prehispanic era, Mole is a thick sauce made out of corn dough, several chili peppers and spices. It can be served over chicken, pork or enchiladas (folded tortillas filled up with meat, cheese or vegetables and covered with sauce). Mexico is believed to have from 50 to 100 different kinds of Mole. The flavor and color (red, green, black, pink, white, brown, etc) change depending on the ingredients, which can be dark chocolate, tomato, dry chilis, almonds, nuts, cinnamon, pumpkin seeds, cheese and even pulque.
