Pozole

As mexican flag, Pozole could be either green, white or red. Also created during the prehispanic era, Mole is a thick sauce made out of corn dough, several chili peppers and spices. Mexico is believed to have from 50 to 100 different kinds of Mole. The flavor and color (red, green, black, pink, white, brown, etc) change depending on the ingredients, which can be dark chocolate, tomato, dry chilis, almonds, nuts, cinnamon, pumpkin seeds, cheese and even pulque.
